As a boat owner, I can say that a service like that has potential. Pros of a “call out” service in my mind:

My boat can stay where it is.
If i roll into an unfamiliar marina with a problem and no local mechanic, i have a chance of getting the boat looked at.
I’d imagine your rates could be somewhat lower since you wouldn’t have some of the traditional overhead of a fixed location.

    Cons:
you may get kicked out of marinas with on site service.
you may be somewhat limited in the repairs you do, particularly if you’re going to be doing fiberglass/paint work.
instead of a cooled, shaded garage area, you get what the weather and local situations give you (like some guy’s backyard on a 100 degree day with the neighbors pit bull looking at you like a piece of fresh meat)

With the right equipment (I would imagine a truck with a large stock of tools and parts, with a crane hoist) advertising, and rates – I’d say go for it.
